Introduction

The Aussie Jam Slice, also colloquially known as “Jam Slice,” is probably one of Australia’s most loved home-baked treats. Irrespective of whether it is in family cookbooks, school bake sales, grandmother’s kitchens, or cozy cafes, this unassuming slice best personifies the heart of Australian home cooking: simple ingredients, comforting textures, and flavors of nostalgia to make one go back in time with every single bite. Its signature combination-a rich buttery base, a layer of glossy fruity jam, and sweet coconut on top-creates a dessert that is both rustic and satisfyingly irresistible.

Jam Slice’s origins date back many years in Australia, when slice desserts became a staple due to the convenience of slices being able to feed quite a few people. Ingredients such as flour, sugar, coconut, and jam were pantry staples in most Australian households, which made this dessert highly accessible. Over time, every family managed to come up with their own version-some with raspberry jam, others with strawberry or apricot, some with a thicker coconut topping for extra texture.

What really makes the Aussie Jam Slice so delectable is the textural balance between soft and crumbly. The base is rich and buttery, holding together like soft shortbread. The middle layer of jam adds vibrant flavor and color, melting slightly during the baking to create a sweet, sticky center. The coconut topping becomes exquisitely golden, slightly crunchy at the edges, and chewy inside-an incredibly satisfying contrast that makes every single bite memorable.

Not only is this dessert delicious, but it is also very easy to prepare. It requires only a few steps and bare-minimum equipment, which will result in a bakery-like product that is perfect for lunchboxes, tea-time snacks, holiday trays, and family gatherings. Another added bonus is that it stores amazingly well, making it great for meal prepping or even as a gift.

Whether you’re Australian or just a lover of classic baked treats, this recipe brings warmth and nostalgia right into your kitchen. Now, let’s dive into the full recipe and bake a slice that captures the comforting spirit of Aussie home baking.

Ingredients

For the base

1 cup (150 g) plain flour

½ cup (110 g) caster sugar

125 g unsalted butter, melted

1 large egg, lightly beaten

1 tsp vanilla extract

For the Jam Layer

¾ cup (240 g) raspberry or strawberry jam

For the Coconut Topping

1 cup (80 g) desiccated coconut

½ cup (100 g) caster sugar

1 large egg, lightly beaten

Instructions

Step 1: Prepare the Base

Preheat your oven to 170°C. Line an 8×8 inch (20×20 cm) square baking tin with parchment paper, leaving some overhang for easy removal.

In a bowl, mix the plain flour and caster sugar. Then add in the melted butter, beaten egg, and vanilla extract. Stir until it forms a smooth, thick dough.

Press the dough evenly into the prepared tin, using the back of a spoon. Try to get it as flat and even as possible because this helps the jam spread smoothly.

Bake for 10-12 minutes, just until lightly set but not browned.

Step 2: Add the Jam Layer

Remove the base from the oven and spread the jam evenly across the surface while the base is still warm. This will allow for the jam to go on smoothly without tearing the crust.

You can use raspberry jam for its bright color and tartness, or strawberry for a sweeter, classic flavor.

Step 3: Prepare the Coconut Topping

In a separate bowl, combine the desiccated coconut, caster sugar, and beaten egg. Mix until the coconut is fully coated and the mixture becomes sticky and crumbly.

Sprinkle the coconut mixture evenly over the jam layer, using your fingers or a fork, until it’s fully covered.

Step 4: Bake

Place the tray back in the oven and bake for 20-25 minutes, or until golden brown and lightly crispy on top.

Step 5: Cooling and Slicing

Let the slice cool in the tin for at least 30 minutes. Lift out using the parchment overhang and place on a board.

Once completely cooled, slice into squares or bars.

It rose to popularity in the mid-20th century when “tray bakes” and slices became a convenient way for families to make affordable desserts using basic pantry staples. In particular, coconut and jam were very popular because of their long life and versatility.

Nowadays, it is still a classic treat served in cafes across Australia, often enjoyed with a cup of tea or coffee. Its simplicity, the nostalgic charm, and undeniable deliciousness have made it a staple dessert that continues to be baked and loved across generations.
