Green banana

Green bananas are firm and have a slightly tart flavor. They contain more resistant starch, a complex carbohydrate that our bodies digest more slowly, which benefits digestive health and blood sugar control. Resistant starch also acts as a prebiotic, feeding beneficial bacteria in the gut. However, due to their higher starch content, green bananas are more difficult for some people to digest.

Yellow banana

As bananas ripen and turn yellow, resistant starch breaks down into simple sugars like glucose, fructose, and sucrose. This makes bananas sweeter and easier to digest.
