Apple Yogurt Cake with Apricot Jam

Cooking Time: 15-20 minutes
Total Time: 25-30 minutes
Ingredients:
- 1 egg
- 1/4 cup (60g) granulated sugar
- 1 tsp vanilla sugar (8g)
- Pinch of salt
- 1/2 cup (125g) yogurt
- 1/4 cup (60ml) oil
- 1 cup (140g) all-purpose flour
- 1 1/2 tsp baking powder (7g)
- 1 medium apple, peeled and chopped
- 1 tbsp brown sugar
- 2 tbsp apricot jam (for topping)
- 2 tbsp shredded coconut (optional)
Directions:
- Preheat oven to 350°F (180°C).
- In a large bowl, whisk together the egg, sugar, vanilla sugar, and salt until smooth.
- Add yogurt and oil, and mix well.
- Sift in flour and baking powder, and fold into the batter.
- Gently fold in the chopped apple.
- Pour the batter into a greased cake pan and sprinkle brown sugar on top.
- Bake for 15-20 minutes, or until golden and a toothpick inserted comes out clean.
- Once cooled, spread apricot jam over the top and sprinkle with shredded coconut, if using.
- Serve and enjoy!
