Apple Yogurt Cake with Apricot Jam

Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Total Time: 25-30 minutes

Ingredients:

  • 1 egg
  • 1/4 cup (60g) granulated sugar
  • 1 tsp vanilla sugar (8g)
  • Pinch of salt
  • 1/2 cup (125g) yogurt
  • 1/4 cup (60ml) oil
  • 1 cup (140g) all-purpose flour
  • 1 1/2 tsp baking powder (7g)
  • 1 medium apple, peeled and chopped
  • 1 tbsp brown sugar
  • 2 tbsp apricot jam (for topping)
  • 2 tbsp shredded coconut (optional)
  • Directions:

    • Preheat oven to 350°F (180°C).
    • In a large bowl, whisk together the egg, sugar, vanilla sugar, and salt until smooth.
    • Add yogurt and oil, and mix well.
    • Sift in flour and baking powder, and fold into the batter.
    • Gently fold in the chopped apple.
    • Pour the batter into a greased cake pan and sprinkle brown sugar on top.
    • Bake for 15-20 minutes, or until golden and a toothpick inserted comes out clean.
    • Once cooled, spread apricot jam over the top and sprinkle with shredded coconut, if using.
    • Serve and enjoy!
