Ingredients

  • 1 cup cornmeal

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 tablespoon sugar (optional)

  • 1 cup buttermilk

  • 1/2 cup water

  • 1 egg

  • 2 tablespoons melted butter or oil

  • Additional butter or oil for cooking

Instructions

  1. Mix Dry Ingredients

    • In a mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar (if using).

  2. Mix Wet Ingredients

    • In a separate bowl, whisk together buttermilk, water, egg, and melted butter or oil.

  3. Combine

    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

    • The batter should be thick but pourable. Add a little more water if it’s too thick.

  4. Cook the Hoecakes

    • Heat a skillet or griddle over medium heat and lightly grease with butter or oil.

    • Pour about 1/4 cup of batter per hoecake onto the skillet.

    • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

  5. Repeat & Serve

    • Repeat with the remaining batter, adding more butter or oil as needed.

    • Serve warm with butter, syrup, honey, or your favorite toppings.

Tips & Notes

  • Crispy on the outside, tender inside: Make sure the skillet is hot but not smoking to avoid burning.

  • Adjust sweetness: Sugar is optional, so feel free to skip or add more to taste.
