Grandma’s Famous Hoecakes

Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon sugar (optional)
1 cup buttermilk
1/2 cup water
1 egg
2 tablespoons melted butter or oil
Additional butter or oil for cooking
Instructions
Mix Dry Ingredients
In a mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar (if using).
Mix Wet Ingredients
In a separate bowl, whisk together buttermilk, water, egg, and melted butter or oil.
Combine
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
The batter should be thick but pourable. Add a little more water if it’s too thick.
Cook the Hoecakes
Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter per hoecake onto the skillet.
Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Repeat & Serve
Repeat with the remaining batter, adding more butter or oil as needed.
Serve warm with butter, syrup, honey, or your favorite toppings.
Tips & Notes
Crispy on the outside, tender inside: Make sure the skillet is hot but not smoking to avoid burning.
Adjust sweetness: Sugar is optional, so feel free to skip or add more to taste.
