Slow Cooker Pork Chops & Rice

Slow Cooker Pork Chops & Rice

My hubby’s absolute favorite combo! He’d request this every day if he could. This dish marries tender, juicy bone-in pork chops with hearty, flavorful rice, all cooked together in a slow cooker for a comforting, no-fuss meal.

Slow Cooker Pork Chops & Rice is a classic, homey dish that likely evolved in kitchens everywhere as families discovered the magic of slow cooking: tender meat and perfectly infused rice without standing over the stove. It’s ideal for busy weeknights yet satisfying enough for a cozy family dinner.

For sides, you have plenty of options. Serve with a crisp salad or steamed green vegetables like broccoli or green beans for freshness. If you want to stay in the comfort-food lane, buttered peas or glazed carrots pair beautifully, either soaking up the savory gravy or providing a sweet contrast.

Ingredients

  • 4 bone-in pork chops, about 1-inch thick

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1 large onion, thinly sliced

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 tablespoon Worcestershire sauce

  • Optional: fresh herbs (thyme or parsley) for garnish

Instructions

  1. Season both sides of the pork chops with salt and pepper.

  2. Heat olive oil in a skillet over medium-high heat. Sear pork chops 1–2 minutes per side until golden brown. Transfer them to the slow cooker.

  3. In the same skillet, sauté the sliced onion until translucent and slightly caramelized. Spread onions over the pork chops in the slow cooker.

  4. Pour chicken broth into the slow cooker and add Worcestershire sauce. Stir gently to combine.

  5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the pork chops are tender.

  6. About 1 hour before serving, stir in the rice. If necessary, remove the pork chops briefly to stir the rice evenly, then return the chops and continue cooking until the rice has absorbed the liquid.

  7. Let the dish rest a few minutes before serving. Garnish with fresh herbs if desired.

  8. Serve hot with your choice of sides and enjoy a comforting, home-cooked meal.

Tips & Variations

  • Herb boost: Add thyme or rosemary to the broth for extra flavor.

  • Rice swap: Brown rice can be used, but increase cooking time and liquid slightly.

  • Veggie add-ins: Toss in diced carrots, peas, or green beans about halfway through cooking.

  • Quick version: Skip searing the chops if short on time; they’ll still cook tenderly in the slow cooker.

This Slow Cooker Pork Chops & Rice is a fuss-free, family-friendly meal that delivers comfort and flavor with minimal effort—a true weeknight winner.
