Chili Lime Chicken with Mango Avocado Salsa
Ingredients
For the Chicken:
1 lb (450g) boneless, skinless chicken breasts or thighs
2 tbsp olive oil
1 tsp chili powder
½ tsp smoked paprika
½ tsp cumin
1 tsp lime zest
1 tbsp lime juice
Salt & black pepper, to taste
For the Mango Avocado Salsa:
1 ripe mango, diced
1 ripe avocado, diced
½ red bell pepper, diced
¼ cup red onion, finely diced
1 tbsp fresh cilantro, chopped
1 tbsp lime juice
Salt & pepper, to taste
For Serving:
Cooked rice, quinoa, or mixed greens

Directions
Marinate the Chicken: In a bowl, combine olive oil, chili powder, smoked paprika, cumin, lime zest, lime juice, salt, and pepper. Toss chicken to coat. Marinate 15–30 minutes.
Cook the Chicken: Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side until fully cooked (internal temp 165°F / 74°C) and lightly charred. Let rest for 3 minutes, then slice.
Prepare the Salsa: In a bowl, gently combine mango, avocado, red bell pepper, red onion, cilantro, lime juice, salt, and pepper.
Assemble the Dish: Serve sliced chicken over rice, quinoa, or greens. Top with mango avocado salsa.
Finish & Serve: Garnish with extra lime wedges and fresh cilantro. Serve immediately.
