- 4 slices sourdough or artisan sandwich bread
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 garlic clove, minced
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons unsalted butter (softened)
- Pinch of salt & black pepper

Sauté Spinach: Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds. Then add the chopped spinach and cook until wilted, which usually takes 2–3 minutes. Season with salt and pepper. Let it cool slightly.
Assemble: Butter one side of each slice of bread. On the unbuttered side, layer mozzarella cheese, the sautéed spinach mixture, crumbled feta, and more mozzarella. Finally, top it with another slice of bread, making sure the buttered side is facing out.
Grill: Heat a nonstick pan over medium heat. Grill each sandwich for about 3–4 minutes on each side until golden brown and the cheese is melted and gooey.
