  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter (softened)

  1. Sauté Spinach: Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds. Then add the chopped spinach and cook until wilted, which usually takes 2–3 minutes. Season with salt and pepper. Let it cool slightly.

  2. Assemble: Butter one side of each slice of bread. On the unbuttered side, layer mozzarella cheese, the sautéed spinach mixture, crumbled feta, and more mozzarella. Finally, top it with another slice of bread, making sure the buttered side is facing out.

  3. Grill: Heat a nonstick pan over medium heat. Grill each sandwich for about 3–4 minutes on each side until golden brown and the cheese is melted and gooey.

  4. Serve: Slice the sandwich in half and serve warm. It goes great with tomato soup or a side salad.
