Garlic Butter Mushroom & Cheese Chicken Rolls

These Garlic Butter Mushroom & Cheese Chicken Rolls are juicy, cheesy, and elegant. Chicken breasts are flattened, rolled around a garlic mushroom and cheese filling, and baked in a garlic butter sauce. The rolls stay moist inside, with melted cheese oozing out when cut, making it a perfect dish for impressing guests.
Ingredients
4 boneless chicken breasts, pounded thin
1 cup mushrooms, finely diced
3 cloves garlic, minced
3 tablespoons butter
½ cup shredded Gruyère or mozzarella cheese
½ cup cream cheese
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon paprika
1 tablespoon olive oil
Fresh thyme for garnish
Directions
Preheat oven to 190°C (375°F). Lightly grease a baking dish.
Melt butter in a skillet and sauté garlic and mushrooms until soft. Remove from heat.
Mix mushrooms with cheeses until creamy.
Season chicken breasts with salt, pepper, and paprika.
Spread filling on each breast and roll tightly, securing with toothpicks.
Heat olive oil in a skillet and sear rolls 2–3 minutes per side until golden.
Place in baking dish and bake 20–25 minutes until cooked through.
Garnish with fresh thyme and serve warm.
