Ingredients :
2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
Salt & pepper to taste
1 cup mushrooms, sliced (button or cremini)
2 cloves garlic, minced
1 tablespoon butter
2 cups baby spinach
1/2 lb baby potatoes, halved
1 tablespoon chopped fresh rosemary
1 tablespoon olive oil (for roasting)
How to Make It :
Roast the Potatoes:
Toss potatoes with olive oil, rosemary, salt, and pepper. Roast at 425°F (220°C) for 25–30 mins until golden and crispy. These crispy comfort bites are your easy dinner MVP.
Sear the Salmon:
Season salmon fillets with salt and pepper. Sear skin-side down in hot oil for 4–5 mins per side. You’ll get that crispy-skinned perfection for a true weeknight gourmet win.
Sauté Garlic Mushrooms:
In the same skillet, melt butter and add mushrooms with garlic. Cook until browned and tender. This adds that rich umami flavor that levels up every bite.
Wilt the Spinach:
Toss fresh spinach into the hot skillet for 1–2 mins until wilted. It’s the fast, feel-good veggie you’ll want on every plate.
Plate & Serve:
Serve the salmon over the spinach, topped with garlicky mushrooms. Add the roasted rosemary potatoes on the side for a full-on flavor-packed power dinner.
